It would be nice if it was possible to add tags to the fields in paragraph setup of a module. E.g. adding the order id as a tag like <!--@Ecom:Order:ID--> to the order confirmation mail subject field in the paragraph setup of the basket module.

For the latest versions of Dynamicweb it should be possible for you to add: "{OrderID}" to the subject of the order confirmation.
