It would be nice to be able to use a form field as the e-mail subject when sending sending via the forms module.

Hi,
I have added this as feature request for the product mangement team. They will deside if it should be implemented and prioritize it.
Have you tried the Item Creator where you can use various fields from an item type and create a form? Here you can select form fields for sender/recipient name, sender/recipient email AND subject (from 8.5.1.0).
