It's a known bug, that the custom fields are not included when exporting products. This will most likely be solved before the next release.

I'm in big trouble right now, because I need to export all products for translation into 4 languages... any timeframe?

Hi Jacob,

Unfortunately, this feature will not be implemented until at least the next release.

However, you could use the Databasepublishing module instead. That way, you are able to export the data to a CSV-format.
