Is it possible to change the fck editor settings for the common paragraph so it doesnt convert danish characters to html entities?

No, unfortunately not. If you're using it in a custom module, you might be able to do something like this using a custom script for the editor. Please consult the documentation for the FCK editor if you want further information about this.
