Hi.
Users can add product quantities to cart going overt the products stock level. Here we have a product variant that has an inventory of 18 units. We add all 18 to the cart using the add to cart button:
...Then we close the cart sidebar and add a quantity of 5 using the add to cart button again:
...And the user now has 23 units in the cart, going over the stock limit of 18. Here is a screenshot from the checkout process:
