The shipping method is also attached to a country fee making it possible to differentiate the delivery fee from for other countries. It may be more expensive to ship from Sweden to Denmark than from Sweden to Sweden. With what you're describing, you charge the same fee for domestic and international shipping, which is great for customers in Australia:)

But to answer your question, just enable all countries for each shipping method in the admin interface.

But there are allot of countries and I don't realy need them so it would be better just to have one and if a new customer is from another country I need to add this to the list.

In the control panel/ecom/general there is somethig called use alternative delivery country.

How does this work and can I use it or is there another whay? 

Just delete the countries you don't need in Configuration -> Country in the ecom admin interface.

Maby I'm doing someting wrong.

In the shipping country and the delivery country the country name of the country in Configuration -> Country is set and I whant the country of the user 

The customer chooses country from the list countries you provide, and based on the country the customer chooses, he can choose from a list of shipping methods. Narrow doew the list of countries you want to dispatch to. If you're only using domestic shipping, remove all other countries before doing anything else. It'll be easier for you to configure shipping methods correctly.
