I dont know if this is the solution you are looking for, but you could collapse any item group you want, and everything will still be ok.

To do this, go to "Management Center -> Item Types -> Settings -> Website settings" and right click on the group you want to make collased by default. Click "Edit group" and set the collapsible state to "Collapsed".

What I mean is that i want to remove them from the website settings to give the user a lesser set of options.

You can use permissions to prevent editors for accessing website properties.

What i really mean is: if I delete part of the Wrap website settings (e.g the fonts part) and instead use a default font set - will it then break the Wrap functionality?

That is not possible. Only remove website permissions in total, or do what Karsten suggests. We do not have or will have permissions on fields.
